Mini Cinnamon Rolls made Light

I love cinnamon, but not cinnamon candy. But cinnamon rolls are right up my alley and these were delicious. What's even better is these are low in points, but that doesn't mean I can eat the whole pan. :)

Mini Cinnamon Rolls

24 mini rolls, 3 WW points with cream cheese frosting, 2 WW points without

2 tubes reduced fat crescent roll
1/2 cup brown sugar, divided
2 T Cinnamon, divided
2 T Light Butter

Pre-heat oven to 350 degrees

On a lightly floured surface unroll one of the tubes of crescent rolls. It would be easier to use the seamless crescent rolls which is low in fat but I can never find it in Walmart so I work with what I have. Piece together the eight rolls and pinch them together so it is one flat rectangle. Spread 1 T of the light butter over the rectangle. In a bowl mix together 1/4 cup of brown sugar and 1 T Cinnamon. Sprinkle over the butter and spread to the edges. Roll the crescent up starting at the long side into a tight tube. Spray a pie plate with cooking spray. Cut the tube into 12 pieces and place them into the pie plate close together. Repeat instructions with the other tube of crescent rolls. You will have 24 cinnamon rolls when finished.

Bake for 15-20 or until lightly browned.

To make the frosting:

4 oz Fat Free cream cheese, softened
2 1/2 T powdered sugar
1 tsp milk

Mix all together. Add more milk if the consistency is too thick.

Cake Batter Cheesecakes made Light

For my book discussion last week I made these and mini cinnamon rolls. I wanted to make them less fattening so I tweaked the recipe a little bit. I think they turned out pretty good.

Cake Batter Cheesecakes

24 servings, 3 WW points with Oreo crusts
2 WW points without Oreo crusts

24 Reduced Fat Oreos, optional
16 ounces Fat Free cream cheese, softened
1/2 cup sugar
1/2 teaspoon vanilla extract
2 large eggs, lightly beaten
1/2 cup Fat Free sour cream
2/3 cup Sugar Free yellow cake mix
2 tablespoons rainbow sprinkles

Preheat the oven to 275 degrees. Prepare cupcake pans with paper liners. Place a whole Oreo in each cupcake liner if you are using the Oreos. In a bowl of a stand mixer with the paddle attachment, mix the cream cheese for 3 minutes on medium speed until smooth. Add in the sugar and mix for 2 more minutes. Add in the vanilla and mix. Slowly pour in the lightly beaten eggs on medium low speed and mix to combine. Add in the sour cream and mix on medium low speed. Be careful not to over mix the cheesecake batter. Sift the cake mix over the bowl with the cheesecake batter to remove any lumps. Stir in 2 tablespoons sprinkles. Fold in gently.

Using a cookie dough scooper or a 1/4 measuring cup, place cheesecake batter on top of each Oreo, if using. Bake the cheesecakes at 275 degrees for 30 minutes. Once they’re done baking, chill them in the refrigerator overnight before serving.

Pizza Egg Rolls

I, Lacey Klemm, am a Pinterest addict. It has been one day since I have pinned. I love that site and I probably shouldn't have taken that first step to becoming a member because I really am obsessed. One of the yummy pins I saw was a pizza cone. I only ever see those when I'm at fairs or the Taste of Chicago. I got to thinking, how could I make a WW friendly pizza cone. I immediately thought of using wonton wrappers, but they are so small. I didn't want to have to make 50 pizza cones. :) So the next best thing was egg roll wrappers. I just couldn't think of how to keep the cone shape. Trying to make a cone shape with a thin egg roll wrapper is hard. The picture to the left was my one and only attempt. After the first one I just decided to make pizza egg rolls. They reminded me of pizza pockets. I think these are awesome and at 3 points apiece I'm in pizza heaven.

Pizza Egg Rolls

8 servings, 3 WW points per serving

8 egg roll wrappers
1/2 cup pizza sauce (I really like Mids)
8 Weight Watcher string cheeses
chopped green pepper, onion, mushrooms
pepperoni or sausage (count points accordingly)


Pre-heat oven to 350 degrees.

Spread about a tablespoon of pizza sauce on an egg roll wrapper. Place a whole string cheese down the middle of the wrapper, or you can cut up the cheese and spread it over the wrapper. Place about a 1/4 cup of the veggies on top and roll up the wrapper like an egg roll. Place it on a baking sheet and repeat with the other wrappers. Spray the rolls with cooking spray and sprinkle with Parmesan cheese if desired. Bake for 15 to 20 minutes or until cheese is melted. Enjoy!

Chicken Lo Mein

This doesn't really taste anything like the lo mein from a Chinese restaurant but I thought it was quite tasty. I don't think it was Will's favorite meal but he said it was all right. This was a very easy meal since it was cooked in the crock pot and to finish it up all you have to do is cook the pasta. I added water but next time I won't since the chicken was frozen and that added water. I think it would have been even better if the sauce would have been a little bit thicker.




Chicken Lo Mein

8 (1 cup) servings, 3 WW points per serving w/o noodles
1 cup of whole wheat noodles is 4 WW points

1 lb. boneless chicken breasts, frozen or thawed (if thawed cut into bite size pieces)
1 bottle (11.4 oz) Kikkoman Stir Fry Sauce
5 oz can sliced water chestnuts, drained
1 medium onion, sliced
16 oz package fresh stir fry vegetables
1 small package mushrooms
1 T minced garlic
1 tsp ginger, fresh would be great but powder would be fine
1 box wheat noodles, cooked according to the package directions

In a crock pot place the chicken, onions, water chestnuts, stir fry vegetables, and mushrooms. In a bowl mix together the stir fry sauce, the garlic, and the ginger. Pour into the crock pot. Cook on low for 4-6 hours or until the chicken is cooked through. If the chicken was frozen take out of the crock pot and cut up, place back in the crock pot. Serve over noodles.

Mini Peanut Butter Pies

I found this recipe on Dashing Dish and tweaked it a bit. I am so glad I found this website. She has some awesome recipes. These were very peanut buttery and yummy. Low in fat and sugar so good for diabetics. These little pies made a co-worker of mine really happy. The original recipe calls to make a normal size pie and to freeze. I might try that next time but for my work parties I made individual servings and didn't freeze. Instead of having a crust on the bottom I just sprinkled some crust on top. I thought they were very satisfying.



Mini Peanut Butter Pies

15 servings, 3 WW points per serving

1 8oz package fat free cream cheese, room temperature
1/2 cup reduced fat peanut butter
1 cup Splenda
1/4 cup fat free milk
8 oz container fat free Cool Whip
1 pre made Oreo pie crust

In a mixing bowl mix together the cream cheese, peanut butter, splenda, milk, and cool whip. Divide evenly between 15 cupcake liners. Cut out one serving of the Oreo pie crust and crush it up. Sprinkle evenly over the 15 cupcakes. Place in the fridge to chill.

If you want a crust take the Oreo crust and dump into a bowl and crush it up. Distribute evenly between the cupcake liners and pat down. Then distribute the peanut butter mixture. Using a crust will make the point value go up.

Strawberries and Cream Trifles


Isn't that pretty? It was so yummy and guilt free. I found this delectable treat on Dashing Dish. She really has some great healthy recipes. I made this for work today and instead of making it in a trifle bowl I decided to do individual servings. I don't have a trifle bowl but one day I would like to get one. I thought the individual servings were cute and made knowing how many points I was eating a snap. I made 15 small cups but I think I could have easily been able to make 20-24. I made angel food cake from a box and used my mini bundt cake pan. That made 24 mini angel food cakes. I did evenly distribute the cake between the 15 cups but I'm sure I could have used one cake per cup. I had left over pudding and whipped cream so I think I could have gotten 24 cups.

I think I will be making these quite often.


Strawberries and Cream Trifles
from Dashing Dish

15 servings, 3 WW points per serving
24 servings, 2 WW points per serving

1 package sugar free fat free vanilla pudding
2 cups skim milk
1 Angel food cake, cut into 1" cubes or (1 box of Angel Food cake mix)
1 (16 oz) package fresh or frozen strawberries, sliced lengthwise
1 (16 oz) container light or fat free cool whip

Prepare pudding with milk according to package directions. To the pudding mixture, add half of the cool whip. (Set the rest of the cool whip aside to garnish on top of each trifle). Make layers in clear glass cups (or in a trifle dish/big glass bowl if you prefer) starting with the angel food cake, pudding/cool whip mix, and strawberries. Repeat until the cups (or trifle dish/bowl) are full. Garnish with the left over whipped topping, a few strawberries. Cover and chill in the fridge at least 4 hours before serving.

Southwestern Chicken Drumsticks

Do you ever start to make a recipe and realize you don't have everything you need? That's what happened when I went to make this. The recipe called for butter, lime juice, and various spices. The lime juice I had was over a year old. So I improvised and pretty much changed everything about the original recipe except the butter and the chicken. I think it turned out pretty good.






Southwestern Chicken Drumsticks

6 servings, 3 WW points per drumstick

6 drumsticks, thawed and skin removed
4 tablespoons butter
1 cup salsa
1/2 tablespoon minced garlic
1/2 teaspoon dried cilantro
1/2 teaspoon cumin
1/2 teaspoon chili powder
salt
pepper

Pre-heat the oven to 350 degrees.

Place the drumsticks in a baking dish. Sprinkle with salt and pepper. In a bowl melt the butter. Mix in the salsa, garlic, cilantro, cumin, and chili powder. Pour over the chicken. Bake for 40 minutes or until the chicken is cooked through. When you serve pour some sauce over the chicken.

Lasagna Cupcakes


I love lasagna. When I saw these cute little lasagna cupcakes on The Girl Who Ate Everything's blog I knew I needed to try these. Not only are they cute but they are very yummy. You use wontons for the pasta so you don't even have to bother with boiling any which is great.







Lasagna Cupcakes

12 lasagna cupcakes, 3 WW points per cupcakes

24 wonton wrappers
12 ounces spaghetti sauce
8 ounces really lean ground beef
1/2 onion, diced
1 cup cottage cheese
1 egg
1 cup shredded mozzarella cheese

Pre-heat oven to 350 degrees

In a skillet brown the ground beef and onions. Once the beef is cooked through drain the beef. Put back in the skillet and add the sauce. While the sauce is simmering mix together the cottage cheese and the egg in a small bowl and set aside. Take a 12 cup muffin pan and spray in with cooking spray. Place a wonton wrapper in each cup. Spoon in tablespoon of spaghetti sauce, followed by a tablespoon of cottage cheese, followed by a tablespoon of mozzarella cheese. Top with another wonton wrapper and gently press down and repeat with other layers ending with cheese. I folded in the edges of the wonton wrappers that were peaking out so they wouldn't burn while cooking.

3pt Homemade Oreos

I make Will his homemade Oreos using chocolate cake mixes. I wondered if I could make them for me modifying the recipe a little bit. Instead of oil I used water and instead of whole eggs I used egg whites. For the filling I used marshmallow creme. The batter isn't as stiff as the original recipe but I just used my smallest cookie scoop instead of trying to hand roll them. You could use two spoons if you don't have a cookie scoop. I think these turned out great and one of Will's friends must have liked them because he ate the rest of them. I wasn't to happy with Will giving away my cookies but I can make more.

3pt Homemade Oreos

21 servings, 3 WW points apiece

1 box chocolate cake mix
1/3 cup water
3 egg whites
1/2 container marshmallow creme


Pre-heat oven to 350 degrees.

In a bowl mix together the cake mix, water, and egg whites. Using a small cookie scoop drop batter onto a greased cookie sheet. Flatten each cookie slightly with fingertips. Bake for 8 minutes. Recipe makes 42 cookies, 21 Oreos. Evenly distribute the marshmallow creme between 21 cookies. Top each cookie with another cookie. Enjoy.

If you don't want to sandwich these cookies together with creme you can eat them plain. They are really good and only 1 WW point apiece.

Coke Zero Brownies

















I make cake with diet pop so I thought why not brownies. The texture is that of a molten lava cake. Dry to the touch on the top and ooey gooey on the bottom. I thought they were tasty. Will liked them. He inhaled the leftovers.

Coke Zero Brownies

20 servings, 3 WW points per serving

1 box brownie mix
1 can of diet pop

Pre-heat oven to 350 degrees.

In a bowl mix together the brownie mix and diet pop. Grease a 9X13 pan with cooking spray and pour the batter into the pan and bake for 25-28 minutes.

Egg Salad

I know it has been awhile since I posted last. I haven't really been cooking lately. I haven't really been feeling well lately either. I found out from the doctor that he's 99% sure that I'm suffering from migraines. Let me just say that migraines are not fun. Not a party at all. But enough about that. About a week ago I had a craving for egg salad. I'm not sure why I don't make it more often because it's easy and yummy. I like my egg salad pretty plain, eggs, miracle whip, and pepper. That's it.


Egg Salad

6, 1/4 cup servings, 3 WW points per serving

5 whole hard boiled eggs
4 hard boiled eggs, whites only
1/4 cup miracle whip
2 squirts of mustard
salt
pepper

Boil the eggs and peel them. I like to use my potato ricer to chop the eggs up. If you don't have a potato ricer and frankly I'm not sure why I have one use a knife or food processor to chop up the eggs. I like my eggs pretty finely chopped. Mix in the miracle whip, mustard, salt, and pepper. Enjoy on crackers or make a sandwich.

I only boiled nine eggs because that is all I had. You can use more mayo if you want it moister.

Shrimp Po'Boys

I love shrimp. I'm not fond of fish but I love shrimp, crab, and lobster was good the one time I had it. Every year I look forward to Red Lobster's shrimp fest. It's so good and the last two years I have went our waitress just kept on feeding us. It was great. I can hardly wait to go this year. I like to incorporate shrimp into our dinners every now and then. It's pretty low in points and not very expensive. I found this recipe in a cookbook I checked out in the library. The cookbook is called Cooking Light Comfort Food Home Cooked Delicious Classics Made Light. The recipe calls to broil the shrimp which I think would have made these crispier but my broiler doesn't work very well so I baked them. I thought this was a very good sandwich.


Shrimp Po'Boys
adapted from the Cooking Light Comfort Food Cookbook

Four 4oz. servings of shrimp, 3 WW points per serving

1 lb. frozen large shrimp, thawed and tails removed
3 tablespoons dry breadcrumbs
1 tablespoon Panko, (optional)
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/4 teaspoon salt
1/4 teaspoon Cajun seasoning or more if you want it spicy
1 tablespoon olive oil
Rolls
lettuce, tomato, onion, and horseradish sauce, if desired

Pre-heat the broiler of yours works if not pre-heat the oven to 350 degrees. Line a baking sheet with heavy duty aluminum foil or a baking mat. Combine shrimp with oil, toss well. Combine breadcrumbs, panko, garlic, pepper, salt, and Cajun in a medium bowl. Stir well to mix together. Place half of the shrimp in the breading and toss to coat. Place on the baking sheet and repeat the process with the remaining shrimp. In the broiler cook for 4 minutes. In the oven cook for 10 minutes or until heated through.

Serve 4 ounces of the shrimp on a roll of your choice. Top with horseradish sauce, lettuce, tomato, and onion if desired. I think I would toast the roll next time. Give a little more crunch to this sandwich.

Blueberry Muffins

So I bought some blueberries and wondered what am I going to do with these. Of course I thought of muffins. But I wanted to make muffins that didn't cost me a lot of points. I found a recipe for Bisquick blueberry muffins. I used the heart healthy Bisquick and modified the recipe a little bit to make it healthier. These muffins ended up being 3 WW points apiece. I didn't think that was too bad. They tasted pretty good. They are a little drier than regular muffins but still pretty tasty. My advice is to eat them right away. I made them on Thursday and they were good on Thursday and Friday but I left for the weekend and when I went to eat one on Monday they tasted old. So eat them up!

Blueberry Muffins

12 muffins, 3 WW points apiece

2 cups Heart Healthy Bisquick
1/3 cup Splenda
2/3 cup fat free milk
2 tablespoons applesauce
1 egg
1 cup blueberries

Pre heat oven to 400 degrees

Coat a 12 cup muffin pan with cooking spray. In a bowl mix together all of the ingredients except the blueberries. Fold in the blueberries. Divide the batter evenly into the 12 cup muffin pan. Bake 13 to 18 minutes or until golden brown.

Vegetable Chicken Soup


I love, love, love my crock pot. I think I have mentioned my love before but it is worth mentioning again. What's not to love? You can throw all the food in the crock pot and it does the work for you. You come home to your house smelling delicious and to a delicious meal. I try to plan a crock pot meal once a week. I work late on Wednesdays and I like to try and feed my husband a home made meal so the crock pot is perfect for that. I found this recipe in one of my new Taste of Home cookbooks. This is out of the 2011 Taste of Home Quick Cooking Annual Recipes. I have a cookbook addiction. It doesn't help when the cookbooks are delivered to my house. This soup is so good. And it's full of veggies which are filling foods. I strayed a bit from the recipe. I didn't saute the veggies before putting them in the crock pot. I added some more veggies and put in pasta instead of barley. With the pasta the soup is 3 WW points per cup. Without it would be 2 WW points per cup.

Vegetable Chicken Soup

14 one cup servings, 3 WW points per serving

1 large onion, chopped
1 cup sliced mushrooms
1/2 cup chopped green pepper
1/2 cup chopped sweet red pepper
5 garlic cloves, minced
2 chicken breasts
1 can (32 oz) chicken broth
1 can (28 oz) crushed tomatoes, undrained
1 can (14.5 oz) diced tomatoes, undrained
2 medium carrots, cut into 1/4 inch slices
1 medium yellow squash, chopped
1 medium zucchini, chopped
1 cup small pasta
1 3/4 teaspoons Italian seasoning
1 1/2 teaspoons pepper

Place all the ingredients but the pasta in a crock pot. Cook on low for 6 hours. At 5 1/2 hours take out the chicken and cut into pieces. Place back in the crock pot. Add the pasta. Cook for the remaining 1/2 hour. Serve with cheese and crackers if desired. Cheese and crackers will add additional points.

Chocolate Whipped Cream Cake

This my friends is Weight Watcher Friendly. And it's sooooooooooo good!!!! It tastes like a devil dog. My hubby even loved it. When I did my first turn at doing WW a few years ago I was told about making a cake with egg whites and diet pop. If you made cupcakes it was 1 point per cupcake. Now with the new points system it is 2 points per cupcake but that's not bad. Basically you take a box mix and mix it with three egg whites and a can of diet pop. Use light pop for light cakes and dark pop for dark cakes. I was going to make cupcakes but my pans were at the library. So I made a whole cake instead. Next time I will make cupcakes just because I can.

This is the cake frosted with fat free cool whip. It looks good like this but I can make it better.













That's what I'm talking about. Heated up chocolate frosting poured over it. Mmmm!!!

Chocolate Whipped Cream Cake

12 slices, 6 WW points per slice
If you make 24 cupcakes it would be 3 WW points a cupcake


Pre-heat oven to 350 degrees

1 devil's food cake mix
3 egg whites
1 can diet coke or some other diet dark pop
1 container fat free cool whip, thawed
1/2 can chocolate frosting

In a bowl mix together the cake mix, eggs, and diet pop with a whisk or mixer. Split the batter between two greased 9 inch round cake pans. Or if making cupcakes split batter between 24 cupcake liners. Bake according to the package directions. Let cool.

Take the cakes out of the pans. Place one cake face first on a cake plate. Spread 1/4 of the cool whip over the cake. Place the second cake bottom down on top of the cool whip. Spread the remaining cool whip over the rest of the cake. In a bowl heat up the chocolate frosting for about 20 to 30 seconds. Heat just long enough to make it pourable. Let cool a minute and pour the frosting over the cake. Cut into 12 slices and enjoy. Refrigerate the leftovers.

If making cupcakes frost each with the cool whip and pour the chocolate frosting over each cupcake.

Chicken Parm Soup

I was looking up something the other day and came across a food blog called The Food in My Beard. I was like hmmm, what's this all about? I found out it is a really awesome blog done by gasp a man with a beard. Most of the blogs I stalk are done by women so finding one by a man is a welcome change. And he has a beard which I love. I'm definitely a beard loving woman. Just look at my handsome beard wearing husband. I told him the day he shaves off his beard I'll know he wants a divorce. If the beard goes, he goes. I kid I kid, not really. His beard just does it for me.

On this blog I found a soup called Chicken Parm. It looked really good and sounded easy enough. It was really good and was really easy since I cooked it in my beloved crock pot. I had to modify the recipe due to I didn't have everything I needed. That seems to happen to me a lot. Every week before I go grocery shopping I decide what recipes I would like to try. I check to see what I have and write down what I need. I forgot to buy diced tomatoes. I thought I had some at home but I'm out. I solved that dilemma by using a jar of marinara sauce. I think it worked out pretty well but since I haven't made it true to his recipe before I'm not sure how it compares.

Chicken Parm Soup

15 one cup servings, 3 WW Points per serving

2 containers of chicken broth
2 frozen chicken breasts
1 jar marinara sauce
1 cup uncooked orzo
shredded Parmesan, for serving

In your crock pot pour in the broth and marinara sauce. Add the chicken breasts and cook on low for 4 hours. Take the chicken breasts out and chop them up. Place back in crock pot. Add one cup of uncooked orzo and cook for another 1/2 hour to an hour or until pasta is cooked. Serve with Parmesan cheese and cheese croutons, recipe below.


Cheese Croutons

6 servings, 3 WW Points per serving

1 french baguette, cut into 32 slices
1/2 cup mozzarella cheese

Pre-heat oven to 350 degrees.

Place cut bread on a baking sheet. Sprinkle each slice with cheese. Bake for about 10 minutes or until cheese has melted.

If the bread is hard, like mine was, before baking that's fine because you will be putting them in the soup. I think this would be really good made into cheese garlic croutons as well.

Cheese Tortellini Soup

Oh the weather outside is frightful but the fire is so delightful and since there's no place to go let it snow, let it snow, let it snow. I'm fine with it snowing since the library was closed today and I didn't have to get out. We couldn't even get out our front door this morning the snow had drifted so high against the screen door. Will tried going out the back door and it was iced up so he had to take out the window and screen so he could climb out that way. I'm pretty sure it's still snowing. UPS even closed last night the weather was so bad. Lake County declared a state of emergency and we were told to only go out if it was an emergency. To stay inside and off the roads. Fine by me. I'm rather cozy sitting here in my bed watching CSI Miami. What's a girl to do when it's cold and snowy out? Make soup of course.

I found this recipe on the Tasty Kitchen site. It looked really good and seemed really easy to make. Both were true. The cheese tortellini is the star. Very delicious. My hubby gave me a gold star so that means he really liked it. Most of the time I only get a "It was good." It is also low in points which I love. If you get a cupful of tortellini without the broth it won't be low in points so make sure the tortellini gets distributed when you serve it.

Cheese Tortellini Soup

14 one cup servings, 3 WW points per serving

1 TB. olive oil
1 small onion, diced
1 TB. minced garlic
15 ounce can of crushed tomatoes with basil
1/2 ts. oregano
salt and pepper
10 cups chicken broth
3 cups cheese tortellini, fresh or frozen, I used fresh
3 cups fresh spinach chopped
Parmesan cheese, to serve

In a stock pot heat up oil and cook onion and garlic until soft. Add the tomatoes, oregano, chicken broth, and salt and pepper. Bring to a boil. Add the tortellini and cook according to package directions, 7-9 minutes. During the last minute of cooking add the spinach. Remove from heat immediately when tortellini is done cooking so it won't overcook. Serve the soup with Parmesan cheese. I made garlic breadsticks to go with.

Garlic Breadsticks

I can't make Zuppa Toscana without making garlic breadsticks to go with it. To me you can't have the one without the other. It would just be wrong. You can find the breadsticks I use at Wonder Bread Bakery and at Walmart. They are called Bread du Jour Original Breadsticks. The bag boasts that they are hot and crispy in minutes. The bag doesn't lie. These aren't as good as Olive Garden but they come close and I find them just as addictive.





Garlic Breadsticks

4 WW points per breadstick with butter
3 WW points per breadstick w/o butter

1 package Bread du Jour Original Breadsticks
1/2 stick of butter, melted or I Can't Believe It's Not Butter spray
garlic salt

Pre-heat oven to 400 degrees.

On a baking sheet spread out the eight breadsticks. Brush with melted butter or spray with butter spray. Place in oven and bake for 10 minutes. Take out of oven and brush with more butter or spray and sprinkle on generous amount of garlic salt. Place back in oven and bake for 2 more minutes. You will not use all the melted butter unless you like your bread really buttery.

Stuffed Pepper Soup

So today was D day. D meaning back on my diet day. Except I don't like the word diet so I will call it a lifestyle change. I have jumped back in my Weight Watcher wagon and am hopeful I will have less bumps this time then I did last time. I do need to learn the new program. They went and changed it on me. But I subscribe to the online tools so I should be okay. I am definitely ready to eat healthier and start exercising. Though I do hate to exercise. I'm still trying to talk myself into liking it. I haven't succeeded yet. To help me get back into the swing of things I went to the store and bought healthy foods, lettuce, veggies, low calorie snacks, and stuff to make stuffed pepper soup. I love this soup but don't make it that often because my hubby doesn't care for green peppers. I didn't make him eat something he's not fond of so I cooked him one of the freezer meals I prepared a few weeks ago. I will be posting about that tomorrow.

I was introduced to stuffed pepper soup by my other mother Mary. Mary is mom to Angela and Angela is one of my very close friends. Angela and I met in elementary school and we became friends and so did our mothers. Mary and Angela are always there when I need them. I got the recipe from Mary and have modified it slightly over the years to make it mine. The original recipe calls for ground beef, rice, and just green peppers but I substitute turkey for the beef, orzo for the rice, and a variety of peppers. If you like stuffed peppers you are going to love this soup. And for those of you changing your lifestyle this soup is waist line friendly at only 3 points a cup.

Looking at this picture makes me realize I need to organize my measuring cups and spoons. It looks a little chaotic.

What you need: Big bottle of V8 Juice, ground turkey, can of diced tomatoes garlic powder, pepper, onion, peppers (green, yellow, orange, and red), orzo, and olive oil. Or if you are allergic to olive oil like my friend Jessica use vegetable oil.





First start by chopping up the peppers. I used one yellow pepper, one orange pepper, one and half green peppers, and a half of a red pepper.











Chop up a medium onion. In a stock pot pour in some olive oil or vegetable oil. Then throw in the peppers and onions and saute until almost tender. Add the ground turkey, garlic powder, and pepper and cook until turkey is cooked through. Most of the time I don't need to drain this because turkey is not very fatty but if you have excess grease drain it.






This is the cooked pepper, onion, and meat mixture. Doesn't it look pretty with all the colors. To this add the bottle of V8 juice and the can of diced tomatoes. Once the juice is hot add the orzo. Let cook for about 20 more minutes or until the orzo is cooked.








Stuffed Pepper Soup

3 WW points per cup

1 package lean ground turkey
1 large bottle of V8 juice
1 yellow pepper
1 orange pepper
1 1/2 green peppers
1/2 red pepper
1 onion
1/2 tablespoon to a tablespoon garlic powder, I like a lot of garlic so I use a lot
1/2 teaspoon pepper
1 can diced tomatoes
4 oz uncooked orzo
Olive Oil

Directions:

Dice up the peppers and onion. Place a stock pot on the stove and pour in enough olive oil to lightly cover the bottom of the pan. You want enough to keep the peppers and onions from sticking to the pan but not so much that they are swimming in oil. Saute until almost tender. Add the turkey. To the pan add the garlic powder and pepper. I don't measure I just shake it in. Cook until the turkey is cooked through. Drain if you need to but most of the time turkey isn't to greasy.

To the turkey mixture add the V8 juice and tomatoes. Let the juice heat up and then add the orzo. Cook for about 20 more minutes or until the orzo is cooked through. This allows for all the flavors to meld together.

I like to eat mine with shredded cheese and crackers. If you are doing WW using cheese and crackers will add on some points.
