It's nice making pizza at home because I can put whatever I want on it and I don't have to spend a fortune. And I like the veggies and Will likes the meat so this way we get what we want. French bread pizza is so easy. You don't have to hassle with making your own crust.
French Bread Pizza's

1 loaf of wide French Loaf Bread
1 cup of pizza sauce
cut up veggies (green peppers, onion, tomatoes, mushrooms)
pepperoni
4 cups of mozzarella
Pre-heat oven to 350 degrees
Cut the French Loaf in half length wise. Spread a 1/2 cup of sauce on each half. On one half put veggies of choice. On the other half put pepperoni. Or do both halves the way you want them. Top each half with 2 cups of cheese.
Bake for 15 to 20 minutes or until cheese is nice and melted.

Pizza Egg Rolls

8 servings, 3 WW points per serving
8 egg roll wrappers
1/2 cup pizza sauce (I really like Mids)
8 Weight Watcher string cheeses
chopped green pepper, onion, mushrooms
pepperoni or sausage (count points accordingly)
Pre-heat oven to 350 degrees.
Spread about a tablespoon of pizza sauce on an egg roll wrapper. Place a whole string cheese down the middle of the wrapper, or you can cut up the cheese and spread it over the wrapper. Place about a 1/4 cup of the veggies on top and roll up the wrapper like an egg roll. Place it on a baking sheet and repeat with the other wrappers. Spray the rolls with cooking spray and sprinkle with Parmesan cheese if desired. Bake for 15 to 20 minutes or until cheese is melted. Enjoy!

Happy New Year!

I hope everyone had a wonderful New Year's Eve. I know I did. I enjoyed my evening watching movies with my furry babies and eating these yummy homemade pizza rolls. At one point a piece they are guilt free. I'm proud of myself for having a WW friendly new year's eve. It's hard to believe that 2011 is gone. That another year has passed. I bid 2011 farewell. It wasn't the greatest year ever but it wasn't the worst either. I had more ups than downs and I think that is all you can ask for. I am looking forward to 2012. May this year be fabulous.
Homemade Pizza Rollsfound on Dashing Dish
14 pizza rolls, 1 WW point per roll

14 Wonton Wrappers
2/3 cup spaghetti sauce or pizza sauce
1/2 cup mozzarella cheese
1/4 of a green pepper chopped finely
1/4 of a red onion chopped finely
1 T Parmesan cheese
Pre-heat the oven to 450 degrees
In a bowl mix together the spaghetti sauce or pizza sauce, mozzarella cheese, green pepper and red onion. You can use any toppings you want. Mushrooms would have been awesome but I was out. If you use meat the point value might go up.
Line a baking sheet with parchment paper or a silicone baking mat and set aside.
Lay out the wonton wrappers on a flat surface. Spoon out a Tablespoon of the sauce mixture onto each wonton wrapper down the middle but staying away from the sides of the wrapper. Fill a small bowl with water. Working with one wonton wrapper at a time dip your finger into the water and trace the edges of the wonton wrapper with water. Fold over the wonton wrapper into a rectangle and seal the edges together. The water will act like a glue. Transfer to the baking mat. Repeat with remaining wrappers. Spray with cooking spray and sprinkle on Parmesan cheese.
Bake for 10-15 minutes, or until the tops are lightly golden brown.

2 cups Heart Healthy Bisquick
3/4 cup water
1/4-1/2 cup pizza sauce
9 slices reduced fat provolone
Toppings of choice (I used pepperoni on half and veggies on the other half)
Pre-heat oven to 350 degrees.
In a bowl mix together the Bisquick and water. On a clean surface dusted with Bisquick knead the dough 10 to fifteen times. Using a rolling pin roll out the dough to about 1/4 inch thick. Spread the sauce on the dough. Top with cheese and then the toppings. Roll up as tight as you can like a jelly roll. Spray a cookie sheet with cookie spray. Using a sharp knife slice the pizza roll into 8 slices. Bake for 10 to 15 minutes or until dough is cooked through and the cheese is melted.

French Bread Pizzas
I think I have mentioned I'm having a terrible craving for pizza. I love making French bread pizzas. The sub rolls sold at Strack and Van Til are great for this but any would do. These are a very easy weeknight meal that takes less than 30 minutes to prepare.

2 sub rolls cut in half lengthwise
8 slices reduced fat provolone
1/2 cup pizza sauce
Desired toppings, I used onion, mushrooms, and green pepper
Pre-heat oven to 350 degrees.
Place the sub roll halves on a baking sheet. Evenly distribute the pizza sauce over the four halves. Top with desired toppings. Top each half with two slices of provolone cheese. Bake for 10 to 15 minutes or until the cheese is all nice and melted.

Homemade Pizza Pockets
I have been having a terrible craving for pizza lately. Of course I have gotten back in my Weight Watcher wagon and I think pizza out is a lot of points. Who can only eat one or two pieces? Pita pizzas are really good but I wanted something different. These pizza pockets turned out really good. I wasn't sure how they would turn out when I made them. Sometimes my experiments just work out. I love when that happens.

8 servings, 4 WW points per serving
2 cups of heart healthy Bisquick
3/4 cup water
8 tablespoons of pizza sauce
8 slices of reduced fat provolone cheese
Veggies of choice chopped up small, I used onion, mushrooms, and green pepper
Pre-heat the oven to 350 degrees.
In a bowl mix together the Bisquick and water. If dough is sticky add a little more Bisquick. If it is to dry add more water. On a clean work surface sprinkled with Bisquick knead the dough 10 to 15 times. Using a rolling pin roll out the dough. Using a large round cookie cutter cut out as many rounds as you can. Re roll out the remaining dough and cut some more. Flatten out each round a little more with the rolling pin. In the middle of each round spread a tablespoon of pizza sauce. Place a slice of cheese on the sauce. You may need to break up the piece of cheese to fit. Place some of the cut up veggies on top of the cheese. Fold the dough over and seal the edges together. Place on a baking sheet and bake for 10-15 minutes or until dough is cooked through and cheese is melty.

Pepperoni Pinwheels

15 pinwheels, 2 WW points per pinwheel
1 can Pillsbury crusty french bread loaf
2 oz mini turkey pepperonis
2 cups mozzarella
Pre-heat oven to 350 degrees
Place a sheet of wax paper on a flat surface. Open the can of french bread and unroll it. Once it is unrolled sprinkle half the pepperonis on the bread, follow with all of the cheese, and finish with the rest of the pepperonis. You could even sprinkle it with garlic powder or Italian seasoning. I might try that next time. Roll it up like a tube. Grease a baking sheet really well with cooking spray or butter. Cut the roll into 15 pieces and place each piece on the baking sheet. Bake for 20 minutes. Serve with pizza or spaghetti sauce or ranch dressing.

Crazy Crust Pizza
It was good but not worth the points. I ended up having to double the crust recipe because it didn't cover the whole pan I was using. It ends up being a thin crust but didn't get crispy. I think it would have been better crispier. Hubby said it was all right so that means you don't have to make this again. I would probably make this again if it didn't cost me 22 points to eat my half of the pizza. I just happened to have a lot of points left today but normally I don't so like I said it's not worth it.

1/2 pizza equals 22 WW Points w/o pepperoni

2 cups flour
2 eggs
1/2 ts. Italian seasoning
1/2 ts. garlic powder
pepper
1 1/3 cup milk
Pepperoni slices
1 small can mushrooms
1/2 cup pizza sauce
2 cups mozzarella cheese
Pre-heat oven to 400 degrees
Lightly grease a rimmed pizza pan or baking sheet. I suggest greasing it really good because mine stuck around the edges.
Mix together the flour, eggs, Italian seasoning, garlic powder, pepper, and milk. The original recipe said to pour batter into the pan and tilt to evenly coat. Mine wasn't thin enough to tilt to cover, I had to spread it with a spoon. The original recipe also said to put the ingredients on the batter and bake for 20-25 minutes. I baked the crust for 10 minutes before adding the toppings, sauce, and mozzarella. I put the mushrooms on one side of the pizza and the other half with pepperoni. Then I spooned on the sauce and topped with the cheese. Bake for 15 minutes more or until the cheese is melted.
