Lazy Woman's Lasagna


I love pasta. I'm sure I have raved about my love of pasta before. I was wanting something cheesy and comforting and this really fit the bill. Will loved it as well and that's always a plus. Paired with my garlic bread sticks this was really yummy.

I made this meatless because I enjoy my pasta meatless but this would be great with meat as well.

1 lb. box of pasta, doesn't matter what shape
1 16 oz. container of cottage cheese, I use fat free
2 eggs
1 8 oz. package mozzarella cheese
1 24 oz. jar spaghetti sauce

Cook the pasta according to the package directions. While the pasta is cooking mix the cottage cheese with the two eggs and the package of mozzarella cheese. Drain the pasta and mix the cottage cheese mixture into the pasta. In a 9X13 baking dish spread out the pasta mixture. Pour the spaghetti sauce over the pasta mixture. Bake in a 350 degree oven for 30 minutes. Take out of the oven and let sit for 5 minutes. Then dig in and enjoy its cheesy goodness.

Tortillas and Wraps

This is like my new favorite food. I really enjoy wraps but I'm not that fond of those flat out wraps. I don't like the taste. You can't see the brand by the picture but these are La Tortilla Factory and they really are delicious. They are only 3 WW points per tortilla. These particular tortillas are big. They make a nice size wrap.








Ham, Cheese, and Pico De Gallo Wraps

1 La Tortilla Factory 100 Calorie Wrap
2 slices thin sliced lean ham
1 slice reduced fat Colby jack cheese
1/4 cup pico de gallo, recipe to follow
1 tablespoon reduced fat ranch dressing

Heat the tortilla in the microwave on a microwave safe plate for about 30 seconds. Assemble with ham, cheese, pico de gallo, and ranch dressing.


Pico De Gallo

8 Roma Tomatoes, diced
1/4 of a red onion, diced
handful of cilantro minced
1/2 lime juiced
1/2 tablespoon minced garlic
salt

Mix together and let sit in the fridge for the flavors to meld.

Crock Pot Whole Chicken


This is a whole chicken in a crock pot. It's kind of hard to tell. But it is oh so good. The chicken is moist and very flavorful. Pair it with mash potatoes and gravy and you have a really good meal.

1 whole chicken small enough to fit in your crock pot, thawed with giblets removed
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon Italian seasoning
1 tablespoon pepper
1/2 tablespoon salt
3 sheets of foil

Take each piece of foil and form it into a ball. Place the balls into the bottom of the crock pot. Mix the seasonings together. Feel free to add or subtract any seasoning you want to. Rub the seasoning under the skin and over the skin of the chicken. Place the chicken into the crock pot and place the lid on it. Turn it on low and cook for 6 to 8 hours or until cooked through. I let it cook all day while I'm at work. The house smells wonderful when I get home and the chicken is falling off the bone.

I'm Back with Cajun Chicken Sandwiches

Underneath the tomatoes is a chicken breast. I probably should have gotten a photo before I added the toppings but use your imagination. I love Cajun seasoning when it's not too spicy. When I make Cajun food myself I can control the heat. I have been having a great time grilling this summer.

Cajun Chicken Sandwiches

2 chicken breasts
about 2 tablespoons Weber Grill Creations N'Orleans Cajun Seasoning or similar
2 slices Provolone Cheese
2 Rolls
Lettuce
Tomato
Ranch Dressing

Sprinkle about a tablespoon a piece of Cajun seasoning on each chicken breast. More if you like spicy. Grill each breast for about 5-7 minutes on each side or until cooked through. Add the cheese when almost done cooking. To assemble place a chicken breast on a roll and top with lettuce, tomato, and ranch dressing. This sandwich is good with onion as well.
